Healthy Arancini

🥄Ingredients:
🔸1 cup brown rice, cooked and cooled
🔸1/2 cup cooked and mashed sweet potato
🔸1/4 cup grated Parmesan cheese
🔸1/4 cup whole wheat breadcrumbs
🔸1/4 cup chopped fresh parsley
🔸1/2 teaspoon dried oregano
🔸Salt and pepper to taste
🔸2-3 tablespoons olive oil

🥄Instructions:

In a mixing bowl, combine the cooked brown rice, mashed sweet potato, Parmesan cheese, breadcrumbs, chopped parsley, dried oregano, salt, and pepper. Mix well until the ingredients are evenly combined.

Take a small amount of the mixture and shape it into a ball, about the size of a golf ball. Repeat with the remaining mixture.

Heat the olive oil in a skillet over medium heat.

Place the rice balls in the skillet and cook until they are golden brown on all sides, turning occasionally to ensure even cooking.

Once cooked, transfer the arancini to a plate lined with paper towels to absorb any excess oil.
