🔸1/2 lb (about 225g) boneless, skinless chicken breast, thinly sliced
🔸2 tablespoons soy sauce
🔸1 tablespoon mirin (or substitute with 1 tablespoon rice vinegar + 1/2 teaspoon raw brown sugar)
🔸1 tablespoon honey or maple syrup
🔸1 teaspoon grated ginger
🔸1 teaspoon minced garlic
🔸1 teaspoon vegetable oil for cooking
🔸1/2 cup brown rice
🔸1 cup mixed salad greens (lettuce, spinach, arugula, etc.)
🔸1 tablespoon sesame seeds (optional)
🔸1/2 cup frozen edamame, thawed
🥄Instructions:
In a bowl, mix soy sauce, mirin, honey (or maple syrup), grated ginger, and minced garlic to create the teriyaki sauce.
Heat vegetable oil in a pan over medium heat. Add the chicken breast and cook until browned and cooked through.
Pour the teriyaki sauce over the chicken, stirring to coat evenly. Simmer for 2-3 minutes until the sauce thickens. Remove from heat.
Cook the brown rice according to the package instructions.
Steam or boil the edamame according to the package instructions.
