🥄Ingredients:
🔸1 package of tofu (about 350g)
🔸1 cup of rice
🔸1-2 avocados
🔸3 tablespoons peanut butter
🔸2 tablespoons soy sauce
🔸1 tablespoon honey or agave syrup
🔸1/2 teaspoon dried ginger
🔸2 tablespoons rice vinegar or apple cider vinegar
🔸Salt and pepper to taste
🔸Sesame seeds or chopped green onions for garnish
🥄Instructions:
Start by cooking the rice according to the instructions on the package.
Meanwhile, cut the tofu into cubes, then fry them in a pan over medium heat with oil until golden brown.
In a small bowl, mix together the peanut butter, soy sauce, honey or agave syrup, ginger, and rice vinegar. Season with salt and pepper to taste.
Pour the sauce mixture over the fried tofu in the pan, then stir to coat evenly. Bring to a simmer, then remove from heat.
Cut the avocados into slices or cubes.
When serving, top the cooked rice with the fresh avocado slices, then place the peanut butter tofu on top.
Finally, garnish with sesame seeds or chopped green onions.
