🥄Ingredients:
🔸250g mushrooms, sliced
🔸2 tablespoons soy sauce
🔸1 tablespoon olive oil
🔸1 teaspoon brown sugar
🔸Salt and pepper to taste
🔸4 cups baby spinach leaves, washed
🥄Instructions:
Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes, or until they start to brown and caramelize.
Stir in the soy sauce and brown sugar. Continue cooking for another 2-3 minutes, stirring occasionally, until the mushrooms are well coated and caramelized. Season with salt and pepper to taste.
While the mushrooms are cooking, heat a separate skillet over medium heat. Add a splash of olive oil, then add the baby spinach leaves to the skillet. Sauté for 2-3 minutes, or until the spinach is wilted and tender.
Serve with cooked rice.
