Summer Salad

🥄Ingredients:
For the Sweet Rosemary White Balsamic Glaze:
🔸1/4 cup white vinegar
🔸2 tbsp honey (or agave as a substitute)
🔸1 sprig of fresh rosemary

🥄For the Easygoing Summer Salad (Half Portion):
🔸2 rounds of creamy burrata cheese
🔸1 heirloom tomato, thinly sliced
🔸1/4 cup halved cherry tomatoes
🔸1 ripe peach, sliced
🔸1/4 cup blackberries
🔸1/4 cup raspberries
🔸1/2 cup black grapes, halved
🔸A handful of fresh basil leaves
🔸2 tbsp extra virgin olive oil
🔸A pinch of flaky salt to enhance the flavors

🥄Instructions:

For the Sweet Rosemary White Balsamic Glaze:

In a small saucepan, combine the white vinegar, honey (or agave), and the fragrant sprig of rosemary. Whisk the ingredients together until well combined.

Place the saucepan over medium heat and let the mixture come to a gentle simmer. Allow it to simmer for a few minutes until it reduces slightly and forms a luscious glaze. Once done, remove the rosemary sprig and set the glaze aside.

For the Easygoing Summer Salad:

Carefully open each burrata round and arrange them, creating a delightful base for the salad.

Artfully arrange the sliced heirloom tomato, halved cherry tomatoes, and juicy peach slices around the burrata.

Scatter the blackberries, raspberries, and halved black grapes over the salad, adding bursts of color and freshness.

Garnish with a handful of fresh basil leaves for a lovely aroma.

Drizzle the extra virgin olive oil and the sweet rosemary white balsamic glaze over the salad, and add a pinch of flaky salt to enhance the flavors.
