🥄Ingredients:
🔸1 salmon fillet
🔸salt and pepper to taste
🔸1 tablespoon olive oil
🔸1/2 teaspoon dried thyme
🔸1/2 teaspoon paprika
🔸1/2 cup broccoli florets
🔸1/4 cup sliced mushrooms
🔸1/2 cup cooked rice
🔸lemon wedges for serving
🥄Instructions:
Season the salmon fillet with salt and pepper.
Heat olive oil in a skillet over medium-high heat, place the salmon fillet in the skillet, skin-side down (if it has a skin), and cook for about 3-4 minutes until the skin is crispy and golden brown. Flip the salmon fillet and cook for an additional 3-4 minutes or until cooked to your desired level of doneness. Remove the salmon from the skillet and set aside.
In the same skillet, add more olive oil if needed. Add the broccoli florets. Season with salt, pepper, dried thyme, and paprika. Cook, stirring occasionally, until the broccoli is tender, about 5-7 minutes. Remove the broccoli from the skillet and set aside.
In the same skillet, add a little more olive oil if needed. Add the sliced mushrooms. Season with salt and pepper. Cook, stirring occasionally, until the mushrooms are tender and lightly browned, about 5 minutes. Remove the mushrooms from the skillet and set aside.
Serve the salmon fillet alongside the cooked rice, sautéed broccoli, and mushrooms. Serve with lemon wedges.
