🥄Ingredients:
🔸250g tofu, cubed
🔸2 tablespoons soy sauce
🔸1 tablespoon honey or maple syrup
🔸1 clove garlic, minced
🔸1 teaspoon ground ginger
🔸1 tablespoon olive oil
🔸1 tablespoon cornstarch
🥄Side dish:
🔸1 cup brown rice
🔸1 cup corn (frozen or canned)
🔸1 cup Brussels sprouts
🔸1 cup cherry tomatoes, halved
🔸herb dressing
🥄Instructions:
Preheat the oven to 200°C (400°F).
In a bowl, mix together the soy sauce, honey or maple syrup, minced garlic, ground ginger, the olive oil and 1 tbsp cornstarch. Add the cubed tofu and toss until evenly coated. Let it marinate for about 15-20 minutes.
Place the marinated tofu cubes on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the tofu is golden brown and crispy.
While the tofu is baking, cook the brown rice according to package instructions.
In a separate pot, steam the Brussels sprouts until they are tender, about 8-10 minutes.
