Avocado Cream Pasta (Vegetarian)

🥄Ingredients:
🔸2 ripe avocados
🔸200 grams pasta
🔸2 cloves garlic, minced
🔸1/4 cup fresh basil leaves
🔸2 tablespoons fresh lemon juice
🔸1/4 cup olive oil
🔸Salt and pepper to taste
🔸1/4 cup grated Parmesan cheese (optional)
🔸Cherry tomatoes, halved
🔸Red pepper flakes

🥄Instructions:

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain the pasta.

While the pasta is cooking, halve the avocados and remove the pits. Scoop the flesh into a food processor or blender.

Add the minced garlic, fresh basil leaves, lemon juice, and olive oil. Blend until smooth and creamy.

Season with salt and pepper to taste.

In a large bowl, combine the cooked pasta and the avocado cream. Toss to coat the pasta evenly. If the sauce is too thick, add a little reserved pasta water, one tablespoon at a time, until you reach the desired consistency.

Serve the avocado pasta topped with grated Parmesan cheese if desired.

Garnish with cherry tomatoes and red pepper flakes for extra flavor and a pop of color.
