Grilled chicken skewers

🥄Ingredients:
🔸1/2 cup plain Greek yogurt
🔸1 tablespoon avocado oil or olive oil
🔸Juice of 1/2 large fresh lemon
🔸1 teaspoon ground cumin
🔸1 teaspoon dried oregano
🔸salt and ground black pepper, to taste
🔸3/4 lb boneless, skinless chicken tenders, breasts, or thighs, cut into bite-sized pieces

🥄To serve:
🔸1 small garden cucumber, sliced
🔸1 cup cherry tomatoes, halved
🔸1/2 red onion, sliced
🔸1/2 cup green olives

🥄Instructions:

In a large bowl, combine the yogurt, oil, lemon zest and juice, cumin, oregano, salt, and pepper. Stir well until smooth.

Add the chicken pieces to the marinade and stir to coat completely. Cover and refrigerate for at least 1 hour or up to overnight.

Preheat an indoor grill pan or outdoor grill over medium heat.

Thread the marinated chicken pieces onto bamboo skewers.

Grill the chicken skewers until cooked through and nicely charred, about 3-5 minutes per side.
