Peanut Butter Cup Overnight Oats

Indulge in a creamy, chocolatey, and peanut buttery breakfast with these easy Peanut Butter Cup Overnight Oats—a perfect make-ahead treat!

🥄Ingredients
For the overnight oats:
🔸1/3 cup vanilla nonfat Greek yogurt
🔸2/3 cup milk
🔸1/2 tablespoon chia seeds
🔸1/2 cup rolled oats (use gluten-free if needed)

For the topping:
🔸1 tablespoon natural peanut butter 
🔸2 tablespoons dark chocolate chips
🔸1/4 teaspoon coconut oil

🥄Instructions:

  1. In a medium bowl, mix the yogurt, milk, chia seeds and oats until combined. Cover the bowl and refrigerate for at least 2-3 hours or overnight.
  2. When ready to serve, scoop the oats into a jar, leaving a little space at the top for the toppings.
  3. To make the chocolate topping, melt the chocolate chips and coconut oil in a small microwave-safe bowl. Heat in 30-second intervals, stirring between each, until the mixture is smooth and melted.
  4. Spread 1 tablespoon of peanut butter over the oats, then drizzle 1 tablespoon of the melted chocolate mixture on top, spreading it to the edges to create a chocolate shell.
  5. Place the jar in the freezer for about 10 minutes, or until the chocolate hardens. 
  6. Use a spoon to crack through the chocolate and enjoy your Peanut Butter Cup Overnight Oats!
