These delicious Teriyaki Chicken Meatballs, made with a savory blend of ground chicken and coated in rich teriyaki sauce, are a perfect choice for a healthy lunch or a satisfying dinner.
🥄Ingredients:
🔸1 lb ground chicken
🔸3/4 cup panko breadcrumbs
🔸1 large egg, beaten
🔸1 clove garlic, minced
🔸1 teaspoon salt
🔸1/4 teaspoon black pepper
🔸1 cup teriyaki sauce
For Serving (optional)
🔸Sesame seeds
🔸Rice
🔸Stir Fry vegetables
🥄Instructions:
- Preheat your oven to 400°F. Line a large baking sheet with parchment paper and set it aside.
- In a large bowl, combine the ground chicken, panko breadcrumbs, beaten egg, 1 tablespoon teriyaki sauce, garlic, salt, and pepper. Mix until everything is well combined.
- Use a cookie scoop or spoon to portion out about 2 tablespoons of the mixture for each meatball. Roll into balls and place them on the prepared baking sheet. Lightly spray your hands with nonstick cooking spray to make rolling easier if needed.
- Bake the meatballs in the preheated oven for 15–20 minutes, or until they are golden brown and cooked through. Check for doneness around 15 minutes to avoid overcooking.
- Once the meatballs are done, transfer them to a skillet or saucepan over medium heat. Pour remaining teriyaki sauce over the meatballs and stir gently until they are evenly coated and warmed through.
- Optional, garnish with sesame seeds and serve with rice or vegetables, if desired.
