🔸1 large egg
🔸2 tablespoons melted butter or oil

🥄Instructions:
In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, mix together the milk, egg, and melted butter or oil. If using, add vanilla extract or grated lemon zest.
Pour the wet ingredients into the dry ingredients, then gently mix until you have a smooth batter. Be careful not to overmix, just combine until the ingredients are incorporated.
Heat a skillet over medium heat and lightly grease with butter or oil. Pour about 1/4 cup of batter onto the skillet for each pancake.
Cook the pancakes until bubbles form on the surface and the edges start to look set, then flip and cook until golden brown on the other side, about 1-2 minutes per side.
