Baked Tofu with Hasselback Potatoes (Vegan Recipe)

🥄Ingredients:
🔸1 package of tofu (about 350g)
🔸4 small-medium sized potatoes
🔸Olive oil
🔸Salt and pepper to taste
🔸Dried herbs (such as thyme or rosemary)
🔸Optional: garlic powder, paprika, or your favorite spices

🥄Instructions:

Preheat the oven to 200°C (about 400°F).

Wash the potatoes thoroughly, then make thin slices into them, about half a centimeter apart, but be careful not to cut all the way through. It’s best to place the potato between two chopsticks to prevent the knife from cutting too deeply downwards.

In a bowl, mix together olive oil and your choice of spices.

Cut the tofu into cubes or slices, then place them on a baking sheet lined with parchment paper.

Place the potatoes on the baking sheet as well, then drizzle them with the olive oil and spice mixture, and season with salt and pepper to taste.

Place the baking sheet in the preheated oven and bake for about 30-40 minutes, or until the potatoes and tofu are golden brown.
