Bean and Rice Burrito Bowl

🥄Ingredients:
🔸1 tablespoon olive oil
🔸1/2 onion, finely chopped
🔸200g ground beef or turkey
🔸1 cup tomato sauce
🔸1/2 can (200g) red kidney beans, drained and rinsed
🔸1/2 cup corn kernels
🔸1 spring onion (scallion), sliced
🔸Fresh cilantro (coriander), chopped
🔸1 cup cooked rice
🔸Salt and pepper to taste

🥄Instructions:

Heat the olive oil in a pan over medium heat. Add the finely chopped onion and sauté for 2-3 minutes until softened.

Add the ground beef or turkey and cook until browned, breaking it up as it cooks.

Stir in the tomato sauce and cook for another 1-2 minutes. Season with salt and pepper.

Add the drained kidney beans and corn to the pan. Stir well and cook for 5 more minutes, allowing the mixture to heat through and the flavors to meld.

Once the mixture is cooked, remove it from heat and stir in the chopped spring onion and fresh cilantro.
