🥄Ingredients:
🔸400g ground chicken
🔸1/2 cup breadcrumbs
🔸1 egg
🔸2 cloves garlic, minced
🔸1/4 cup Parmesan cheese, grated (optional)
🔸1 tablespoon fresh parsley, chopped
🔸Salt and pepper to taste
🔸1 tablespoon olive oil (for cooking)
🔸1 cup long-grain rice (basmati or jasmine)
🔸2 cups chicken broth or water
🔸1 cup fresh spinach
🔸1/4 cup fresh cilantro
🔸1/4 cup fresh parsley
🔸1 garlic clove
🔸1 tablespoon lime juice
🔸Salt and pepper to taste
🥄Instructions:
In a large bowl, combine the ground chicken, breadcrumbs, egg, minced garlic, Parmesan (if using), chopped parsley, salt, and pepper.
Mix until everything is well combined. Form the mixture into small meatballs.
Heat the olive oil in a pan over medium heat. Cook the meatballs for 6-8 minutes, turning occasionally, until browned on all sides and fully cooked through. Set aside.
While the meatballs are cooking, rinse the rice under cold water. Add the rice and chicken broth (or water) to a pot and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes until the rice is fully cooked.
In a blender or food processor, blend the spinach, cilantro, parsley, garlic, lime juice, salt, and pepper until smooth.
Once the rice is done, fluff it with a fork and stir in the spinach herb mixture, making sure it’s evenly combined.
