Creamy Gnocchi with Bacon and Spinach

🥄Ingredients:
🔸500g gnocchi
🔸150g bacon, chopped
🔸2 tablespoons olive oil (if needed)
🔸200g fresh spinach
🔸1 cup heavy cream
🔸1/2 cup grated Parmesan cheese
🔸Salt and pepper to taste
🔸Freshly ground black pepper (optional, for garnish)

🥄Instructions:
Bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions until they float to the surface. Drain and set aside.

In a large pan, cook the chopped bacon over medium heat until crispy. Add the cooked gnocchi to the pan, tossing everything together. Pour in the heavy cream and bring it to a simmer. Stir in the grated Parmesan cheese, and cook until the sauce thickens slightly, about 3-4 minutes. Season with salt and pepper to taste.

Add the fresh spinach to the pan and cook until wilted, about 2-3 minutes.

Garnish with freshly ground black pepper if desired.
