🥄Ingredients:
🔸2 large bell peppers
🔸1 onion, finely chopped
🔸250g (1 lb) ground beef
🔸½ can (400g) diced tomatoes
🔸½ cup shredded cheddar cheese
🔸1 tbsp olive oil
🔸1 tsp paprika
🔸1 tsp cumin
🔸Salt and pepper to taste
🥄Instructions:
Preheat your oven to 180°C (350°F).
Cut the tops off the bell peppers and remove the seeds and membranes. Keep the tops for decoration later.
Carefully carve spooky faces into the peppers using a small knife to create jack-o’-lanterns, monsters, or Frankenstein faces.
Heat olive oil in a pan over medium heat. Add the chopped onion and sauté until soft.
Add the ground beef and cook until browned. Drain any excess fat.
Stir in the diced tomatoes, paprika, and cumin. Season with salt and pepper.
Simmer for 5-10 minutes until the mixture thickens slightly.
Spoon the beef mixture into the hollowed-out peppers.
Top each pepper with shredded cheddar cheese.
Place the pepper “lids” (tops) back on the peppers for decoration.
Place the stuffed peppers in a baking dish and cover with foil.
Bake for 30-35 minutes, or until the peppers are tender.
For extra spookiness, remove the foil for the last 10 minutes so the cheese gets bubbly and golden.
