Mini quiche

🥄Ingredients:
🔸1 cup cooked quinoa
🔸1/2 red onion, chopped
🔸1/2 cucumber, diced
🔸1/2 can black beans, drained and rinsed
🔸1/2 can chickpeas, drained and rinsed
🔸1 avocado, diced
🔸1 cups baby spinach
🔸2-3 tbsp hummus
🔸1-2 tbsp sunflower seeds
🔸Salt and pepper, to taste

🥄Instructions:

Cook the quinoa according to package instructions until tender. Fluff with a fork and set aside.

In a bowl, combine the quinoa, chopped red onion, diced cucumber, black beans, chickpeas, and diced avocado.

Add the baby spinach and toss to combine.

Add the hummus over the top of the bowl.

Sprinkle with sunflower seeds, salt, and pepper to taste.

Feel free to adjust the quantities of the ingredients to your liking, and you can also add any other toppings or ingredients that you prefer.
