🥄Ingredients:
🔸1 tablespoon olive oil
🔸1 chicken breast, diced
🔸1 cup cherry tomatoes, halved
🔸1/2 red bell pepper, sliced
🔸1/2 yellow bell pepper, sliced
🔸1 cup rice
🔸1 tablespoon curry powder
🔸1 can (400ml) coconut milk
🔸Salt and pepper to taste
🥄Instructions:
Heat olive oil in a large pot over medium heat. Add the diced chicken breasts. Cook for 5-7 minutes until whitening on all sides.
Add the cherry tomatoes, red and yellow bell peppers, and stir for 2-3 minutes until the vegetables soften slightly.
Stir in curry powder, pour in the coconut milk. Stir well, bring to a boil, then reduce the heat to low, then add the cooked rice.
Seasoning with salt and pepper if needed.
