Salmon Patties with Coleslaw

These Baked Salmon Patties with Coleslaw are a healthy, flavorful twist on a classic favorite. Easy to prepare and baked to golden perfection, they pair perfectly with a creamy, tangy coleslaw for a balanced and delicious meal.

🥄Ingredients
For salmon patties:
🔸1 (14 oz) can salmon, drained
🔸1 tsp onion powder
🔸1 tsp garlic powder
🔸1 tbsp Dijon mustard
🔸2 tbsp green onions, chopped
🔸2 tbsp mayonnaise
🔸1 egg, beaten
🔸½ cup breadcrumbs

For coleslaw:
🔸1 cup slaw mix
🔸2 tbsp mayonnaise
🔸1 tsp white vinegar
🔸Salt and pepper, to taste

🥄Instructions:

  1. Preheat your oven to 375°F. Line a baking sheet with parchment paper or lightly grease it with oil.
  2. In a large bowl, combine the salmon, onion powder, garlic powder, Dijon mustard, green onions, mayonnaise, egg, and breadcrumbs. Mix until all ingredients are well combined.
  3. Shape the salmon mixture into 6 evenly sized patties and place them on the prepared baking sheet.
  4. Bake the salmon patties in the preheated oven for 10-15  minutes, flipping them halfway through, until they are golden brown and cooked through.
  5. In a mixing bowl, toss the slaw mix with mayonnaise, white vinegar, salt, and pepper. Adjust seasoning to taste.
  6. Serve the baked salmon patties warm with a side of coleslaw. Add a squeeze of lemon or your favorite dipping sauce for extra flavor.
