Sriracha Shrimp Bowls

Spice up your dinner routine with these flavorful Sriracha Shrimp Bowls! Packed with tender shrimp, crisp veggies, and a bed of light cauliflower rice, this quick and healthy meal is perfect for busy weeknights.

🥄Ingredients:
🔸1 lb wild caught shrimp, peeled, deveined
🔸2 tbsp olive oil 
🔸2 tbsp Sriracha sauce hot sauce
🔸1 tsp minced garlic 
🔸1 tsp onion powder
🔸1 tsp salt 
🔸½ tsp ground black pepper

For the bowl:
🔸2 cup cooked cauliflower rice
🔸½ cup chopped mini cucumbers
🔸½ cup chopped cherry tomatoes 
🔸Green onions, sliced

🥄Instructions:

  1. Pat the shrimp dry with paper towels and place them in a large mixing bowl.
  2. Add olive oil, Sriracha sauce, minced garlic, onion powder, salt, and black pepper to the bowl. Toss to coat the shrimp evenly with the seasoning.
  3. Heat a large skillet over medium-high heat. Once hot, add the seasoned shrimp in a single layer.
  4. Cook the shrimp for 2-3 minutes per side, or until they turn pink and are fully cooked. Remove from the skillet and set aside.
  5. Divide the cooked cauliflower rice evenly among serving bowls. Top each bowl with cooked shrimp, chopped mini cucumbers, and cherry tomatoes. Sprinkle sliced green onions over the bowls for garnish and extra flavor. 
  6. Serve immediately. Feel free to add extra Sriracha for additional heat and flavor.
