Thai turkey lettuce wraps

🥄Ingredients
SAUCE:
🔸2 tablespoons all-natural peanut butter
🔸1 ½ tablespoons soy sauce
🔸1 tablespoon rice vinegar
🔸1 tablespoon water
🔸½ teaspoon sesame oil
🔸1 teaspoon lime juice

🥄FILLING:
🔸½ tablespoon olive oil
🔸½ onion, finely chopped
🔸2 cloves garlic, minced
🔸½ pound lean ground turkey
🔸½ cup shredded carrots
🔸1 teaspoon curry powder

🥄TO SERVE:
🔸Romaine lettuce leaves
🔸Green onions, for garnish
🔸Peanuts, for garnish

🥄Instructions

In a small jar, combine the peanut butter, soy sauce, rice vinegar, water, sesame oil, and lime juice. Shake well until smooth to make the peanut sauce.

Heat olive oil in a large pan over medium heat. Add the chopped onions, minced garlic, and the curry powder. Stir and cook for 2-3 minutes until the curry is evenly mixed with the onions.

Add the ground turkey to the pan and cook for 5-7 minutes, breaking it up with a spatula, until it is no longer pink and fully cooked.

Stir in the shredded carrots, then pour the prepared peanut sauce over the turkey mixture. Stir well to coat everything evenly. Allow the mixture to cool slightly.

To serve, take individual romaine lettuce leaves and spoon the Thai turkey filling into each leaf. Garnish with green onions and peanuts.
