Vegan taco

🥄Ingredients:
Taco Filling:
🔸1 cup canned black beans, drained and rinsed
🔸1 cup corn (frozen or canned)
🔸1 medium onion, finely chopped
🔸1 teaspoon ground cumin
🔸1 teaspoon smoked paprika
🔸1/2 teaspoon chili powder
🔸Salt and pepper to taste

🥄Toppings:
🔸Taco shells or tortillas
🔸Diced tomatoes
🔸Sliced avocado
🔸Chopped cilantro or parsley
🔸Lime wedges

🥄Instructions:

In a skillet over medium heat, heat some olive oil. Add the chopped onion and cook until softened, about 3-4 minutes. Add the black beans and corn to the skillet. Stir in the ground cumin, smoked paprika, chili powder, salt, and pepper. Cook for 5-7 minutes, or until heated through and the flavors are well combined. Taste and adjust seasoning if needed.

While the filling is cooking, warm up the taco shells or tortillas according to package instructions.

Once the filling is ready, assemble your tacos. Spoon the bean and corn mixture into each taco shell or tortilla. Top with diced tomatoes, sliced avocado, chopped fresh greens, and a squeeze of lime juice.
