🥄Ingredients:
🔸2 rice paper wrappers
🔸100g firm tofu, cut into thin strips
🔸1/2 large carrot, julienned
🔸1/2 cucumber, julienned
🔸Fresh mint or basil leaves (optional)
🔸2 tablespoons hoisin sauce
🔸1/2 tablespoon soy sauce (for tofu marinade)
🔸1/2 tablespoon olive oil (for tofu cooking)
🥄Instructions:
Prepare the Tofu:
Marinate the tofu strips in soy sauce for about 10 minutes. Heat a pan with olive oil over medium heat and cook the tofu strips until golden and slightly crispy on all sides. Set aside and let them cool.
Prepare the Vegetables:
Julienne the carrot and cucumber into thin strips. Set aside.
Soften the Rice Paper Wrappers:
Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes soft and pliable. Lay it flat on a clean, damp surface.
Assemble the Summer Rolls:
Place a few strips of tofu, julienned carrot, cucumber, and a few fresh mint or basil leaves (if using) in the center of the rice paper. Fold the sides over the filling, then roll it up tightly from the bottom to the top.
Repeat:
Repeat the process with the remaining rice paper wrappers and ingredients.
Serve:
Serve the summer rolls with hoisin sauce for dipping.
