Chicken Club Lettuce Wraps
All the flavor of a classic chicken club sandwich without the carbs. This recipe cleverly uses large iceberg lettuce leaves to wrap up chicken, bacon, tomato, and mayo.
Ingredients
- 6-7 large iceberg lettuce leaves
- 1 tbsp mayonnaise
- 3 oz (85g) sliced chicken or turkey breast
- 2 strips of bacon, cooked
- 4 thin slices of tomato
Instructions
- Create a lettuce base by overlapping 6-7 large lettuce leaves on a piece of parchment paper, forming a rectangle.
- Spread the mayonnaise down the center of the lettuce.
- Layer the ingredients on top of the mayo: chicken/turkey, bacon, and tomato slices.
- Tightly roll the lettuce wrap jelly-roll style, using the parchment paper to help guide and tighten it.
- When halfway through rolling, tuck in the sides. Continue rolling tightly.
- Wrap the parchment paper around the finished wrap, then slice in half with a serrated knife.
