Peanut Butter Cup Overnight Oats

A decadent yet healthy make-ahead breakfast, these overnight oats feature a creamy oat base topped with a layer of peanut butter and a hard chocolate shell.

Ingredients

For the Overnight Oats:

  • 1/3 cup (80g) vanilla nonfat Greek yogurt
  • 2/3 cup (160ml) milk
  • 1/2 tbsp chia seeds
  • 1/2 cup (40g) rolled oats

For the Topping:

  • 1 tbsp natural peanut butter
  • 2 tbsp dark chocolate chips
  • 1/4 tsp coconut oil

Instructions

  1. In a medium bowl or jar, mix the yogurt, milk, chia seeds, and oats until combined. Cover and refrigerate for at least 2-3 hours or overnight.
  2. When ready to serve, make the chocolate topping by melting the chocolate chips and coconut oil in the microwave.
  3. Spread the peanut butter over the oats, then drizzle the melted chocolate on top, spreading to the edges.
  4. Place in the freezer for about 10 minutes to harden the chocolate shell. Crack with a spoon and enjoy!
