Peanut Butter Cup Overnight Oats
A decadent yet healthy make-ahead breakfast, these overnight oats feature a creamy oat base topped with a layer of peanut butter and a hard chocolate shell.
Ingredients
For the Overnight Oats:
- 1/3 cup (80g) vanilla nonfat Greek yogurt
- 2/3 cup (160ml) milk
- 1/2 tbsp chia seeds
- 1/2 cup (40g) rolled oats
For the Topping:
- 1 tbsp natural peanut butter
- 2 tbsp dark chocolate chips
- 1/4 tsp coconut oil
Instructions
- In a medium bowl or jar, mix the yogurt, milk, chia seeds, and oats until combined. Cover and refrigerate for at least 2-3 hours or overnight.
- When ready to serve, make the chocolate topping by melting the chocolate chips and coconut oil in the microwave.
- Spread the peanut butter over the oats, then drizzle the melted chocolate on top, spreading to the edges.
- Place in the freezer for about 10 minutes to harden the chocolate shell. Crack with a spoon and enjoy!
