Spicy Sriracha Shrimp Bowls

A quick, healthy, and low-carb meal with a kick. Tender shrimp are cooked in a spicy sriracha seasoning and served over cauliflower rice with fresh, crisp vegetables.

Ingredients

For the Shrimp:

  • 1 lb (450g) shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp Sriracha sauce
  • 1 tsp minced garlic
  • 1 tsp onion powder
  • 1 tsp salt & 1/2 tsp black pepper

For the Bowl:

  • 2 cups (240g) cooked cauliflower rice
  • 1/2 cup (60g) chopped mini cucumbers
  • 1/2 cup (75g) chopped cherry tomatoes

Instructions

  1. Pat the shrimp dry and place them in a large mixing bowl.
  2. Add olive oil, Sriracha, garlic, onion powder, salt, and pepper. Toss to coat the shrimp evenly.
  3. Heat a large skillet over medium-high heat. Add the shrimp in a single layer.
  4. Cook for 2-3 minutes per side, or until they turn pink and are fully cooked.
  5. Assemble the bowls by dividing the cauliflower rice, then topping with the cooked shrimp, cucumbers, and tomatoes.
