Spicy Sriracha Shrimp Bowls
A quick, healthy, and low-carb meal with a kick. Tender shrimp are cooked in a spicy sriracha seasoning and served over cauliflower rice with fresh, crisp vegetables.
Ingredients
For the Shrimp:
- 1 lb (450g) shrimp, peeled and deveined
- 2 tbsp olive oil
- 2 tbsp Sriracha sauce
- 1 tsp minced garlic
- 1 tsp onion powder
- 1 tsp salt & 1/2 tsp black pepper
For the Bowl:
- 2 cups (240g) cooked cauliflower rice
- 1/2 cup (60g) chopped mini cucumbers
- 1/2 cup (75g) chopped cherry tomatoes
Instructions
- Pat the shrimp dry and place them in a large mixing bowl.
- Add olive oil, Sriracha, garlic, onion powder, salt, and pepper. Toss to coat the shrimp evenly.
- Heat a large skillet over medium-high heat. Add the shrimp in a single layer.
- Cook for 2-3 minutes per side, or until they turn pink and are fully cooked.
- Assemble the bowls by dividing the cauliflower rice, then topping with the cooked shrimp, cucumbers, and tomatoes.
