Baked Salmon Patties with Coleslaw
A healthy and flavorful twist on a classic, these salmon patties are baked instead of fried and served with a simple, creamy coleslaw for a perfectly balanced meal.
Ingredients
For Salmon Patties:
- 1 can (14 oz / 400g) salmon, drained
- 1 tsp onion powder & 1 tsp garlic powder
- 1 tbsp Dijon mustard
- 2 tbsp green onions, chopped
- 2 tbsp mayonnaise
- 1 egg, beaten
- 1/2 cup (60g) breadcrumbs
For Coleslaw:
- 1 cup (90g) slaw mix
- 2 tbsp mayonnaise
- 1 tsp white vinegar
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine all salmon patty ingredients. Mix until well combined.
- Shape the mixture into 6 evenly sized patties and place them on a lined baking sheet.
- Bake for 10-15 minutes, flipping halfway through, until golden brown and cooked through.
- While patties bake, mix the coleslaw by tossing the slaw mix with mayonnaise, vinegar, salt, and pepper.
- Serve the warm salmon patties with a side of coleslaw.
