Baked Salmon Patties with Coleslaw

A healthy and flavorful twist on a classic, these salmon patties are baked instead of fried and served with a simple, creamy coleslaw for a perfectly balanced meal.

Ingredients

For Salmon Patties:

  • 1 can (14 oz / 400g) salmon, drained
  • 1 tsp onion powder & 1 tsp garlic powder
  • 1 tbsp Dijon mustard
  • 2 tbsp green onions, chopped
  • 2 tbsp mayonnaise
  • 1 egg, beaten
  • 1/2 cup (60g) breadcrumbs

For Coleslaw:

  • 1 cup (90g) slaw mix
  • 2 tbsp mayonnaise
  • 1 tsp white vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine all salmon patty ingredients. Mix until well combined.
  3. Shape the mixture into 6 evenly sized patties and place them on a lined baking sheet.
  4. Bake for 10-15 minutes, flipping halfway through, until golden brown and cooked through.
  5. While patties bake, mix the coleslaw by tossing the slaw mix with mayonnaise, vinegar, salt, and pepper.
  6. Serve the warm salmon patties with a side of coleslaw.
