Cold Sesame Noodle Bowls

Perfect for meal prep, these versatile noodle bowls are tossed in a savory sesame-soy dressing and can be enjoyed hot or cold with your favorite protein and veggies.

Ingredients

For the Sesame Sauce:

  • 1/4 cup (60ml) warm water
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 clove garlic, grated
  • Sriracha and sugar to taste

For the Bowls:

  • 5 oz (140g) stir-fry noodles or linguine
  • 1 cup (150g) cooked edamame
  • 1 cucumber, diced
  • 1/2 lb (225g) cooked chicken breast, diced (optional)
  • Sesame seeds for garnish

Instructions

  1. In a bowl or jar, whisk or shake together all the sauce ingredients until smooth.
  2. Cook the noodles according to package instructions. Drain well.
  3. Toss the cooked noodles with about half of the sesame sauce until coated.
  4. Assemble the bowls by dividing the noodles, edamame, cucumber, and chicken (if using) into containers.
  5. Drizzle with extra sauce and sprinkle with sesame seeds before serving. Can be stored in the fridge for 3-4 days.
