Cold Sesame Noodle Bowls
Perfect for meal prep, these versatile noodle bowls are tossed in a savory sesame-soy dressing and can be enjoyed hot or cold with your favorite protein and veggies.
Ingredients
For the Sesame Sauce:
- 1/4 cup (60ml) warm water
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 clove garlic, grated
- Sriracha and sugar to taste
For the Bowls:
- 5 oz (140g) stir-fry noodles or linguine
- 1 cup (150g) cooked edamame
- 1 cucumber, diced
- 1/2 lb (225g) cooked chicken breast, diced (optional)
- Sesame seeds for garnish
Instructions
- In a bowl or jar, whisk or shake together all the sauce ingredients until smooth.
- Cook the noodles according to package instructions. Drain well.
- Toss the cooked noodles with about half of the sesame sauce until coated.
- Assemble the bowls by dividing the noodles, edamame, cucumber, and chicken (if using) into containers.
- Drizzle with extra sauce and sprinkle with sesame seeds before serving. Can be stored in the fridge for 3-4 days.
