Quick & Easy Pasta Salad

Designed for busy days, this pasta salad is a lifesaver. It uses frozen vegetables cooked right with the pasta and is tossed in a simple, shake-in-a-jar vinaigrette.

Cook Time: 10 minutes

Ingredients

  • 9 oz (250g) pasta, any shape
  • 1 1/2 cups (150g) frozen mixed vegetables
  • 1/3 cup (50g) canned corn
  • 1/2 red pepper, chopped

For the Dressing:

  • 1.5 tbsp olive oil
  • 1 tsp honey
  • 1/2 tsp dried mixed herbs
  • 1/4 tsp Dijon mustard

Instructions

  1. Cook the pasta in a pot of boiling salted water according to package instructions. Add the frozen vegetables for the last 4 minutes of cooking time.
  2. Drain the pasta and vegetables, then rinse under cold water to cool them down. Transfer to a large bowl.
  3. Add the corn and chopped red pepper to the bowl.
  4. In a small jar, combine all dressing ingredients. Close the lid and shake well to mix.
  5. Pour the dressing over the pasta salad and toss everything together until well coated.
