Quick & Easy Pasta Salad
Designed for busy days, this pasta salad is a lifesaver. It uses frozen vegetables cooked right with the pasta and is tossed in a simple, shake-in-a-jar vinaigrette.
Ingredients
- 9 oz (250g) pasta, any shape
- 1 1/2 cups (150g) frozen mixed vegetables
- 1/3 cup (50g) canned corn
- 1/2 red pepper, chopped
For the Dressing:
- 1.5 tbsp olive oil
- 1 tsp honey
- 1/2 tsp dried mixed herbs
- 1/4 tsp Dijon mustard
Instructions
- Cook the pasta in a pot of boiling salted water according to package instructions. Add the frozen vegetables for the last 4 minutes of cooking time.
- Drain the pasta and vegetables, then rinse under cold water to cool them down. Transfer to a large bowl.
- Add the corn and chopped red pepper to the bowl.
- In a small jar, combine all dressing ingredients. Close the lid and shake well to mix.
- Pour the dressing over the pasta salad and toss everything together until well coated.
