Easy Beef Burrito Bowl
A deconstructed burrito in a bowl, this easy recipe features a savory mixture of ground beef, beans, and corn in a light tomato sauce, served over a bed of rice.
Ingredients
- 1 tbsp olive oil
- 1/2 onion, finely chopped
- 7 oz (200g) ground beef or turkey
- 1 cup (240ml) tomato sauce
- 1/2 can (7 oz / 200g) red kidney beans, rinsed
- 1/2 cup (75g) corn kernels
- 1 spring onion, sliced
- 1 cup (185g) cooked rice
Instructions
- Heat olive oil in a pan and sauté the onion until softened.
- Add the ground meat and cook until browned.
- Stir in the tomato sauce, kidney beans, and corn. Season with salt and pepper and cook for 5 more minutes.
- Stir in the spring onion and fresh cilantro.
- Serve the mixture over a bed of cooked rice.
