Easy Beef Burrito Bowl

A deconstructed burrito in a bowl, this easy recipe features a savory mixture of ground beef, beans, and corn in a light tomato sauce, served over a bed of rice.

Ingredients

  • 1 tbsp olive oil
  • 1/2 onion, finely chopped
  • 7 oz (200g) ground beef or turkey
  • 1 cup (240ml) tomato sauce
  • 1/2 can (7 oz / 200g) red kidney beans, rinsed
  • 1/2 cup (75g) corn kernels
  • 1 spring onion, sliced
  • 1 cup (185g) cooked rice

Instructions

  1. Heat olive oil in a pan and sauté the onion until softened.
  2. Add the ground meat and cook until browned.
  3. Stir in the tomato sauce, kidney beans, and corn. Season with salt and pepper and cook for 5 more minutes.
  4. Stir in the spring onion and fresh cilantro.
  5. Serve the mixture over a bed of cooked rice.
