Herby Green Rice with Chicken Meatballs
A vibrant and flavorful meal featuring juicy, tender chicken meatballs served over a bed of 'green rice,' which gets its color and herby taste from blended spinach and cilantro.
Ingredients
For the Chicken Meatballs:
- 14 oz (400g) ground chicken
- 1/2 cup (60g) breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1/4 cup (25g) Parmesan cheese (optional)
For the Green Rice:
- 1 cup (185g) long-grain rice
- 2 cups (475ml) chicken broth or water
- 1 cup (30g) fresh spinach
- 1/4 cup (10g) fresh cilantro
- 1/4 cup (10g) fresh parsley
- 1 garlic clove
Instructions
- Make the meatballs by combining ground chicken, breadcrumbs, egg, garlic, Parmesan, salt and pepper. Form into small meatballs.
- Cook the meatballs in a pan with olive oil over medium heat for 6-8 minutes, until browned and cooked through.
- While the meatballs cook, prepare the green sauce by blending spinach, cilantro, parsley, garlic, and lime juice until smooth.
- Cook the rice in chicken broth until fully cooked.
- Fluff the cooked rice with a fork and stir in the spinach herb mixture until evenly combined.
- Serve the green rice topped with the cooked chicken meatballs.
