Herby Green Rice with Chicken Meatballs

Ingredients

For the Chicken Meatballs:

  • 14 oz (400g) ground chicken
  • 1/2 cup (60g) breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup (25g) Parmesan cheese (optional)

For the Green Rice:

  • 1 cup (185g) long-grain rice
  • 2 cups (475ml) chicken broth or water
  • 1 cup (30g) fresh spinach
  • 1/4 cup (10g) fresh cilantro
  • 1/4 cup (10g) fresh parsley
  • 1 garlic clove

Instructions

  1. Make the meatballs by combining ground chicken, breadcrumbs, egg, garlic, Parmesan, salt and pepper. Form into small meatballs.
  2. Cook the meatballs in a pan with olive oil over medium heat for 6-8 minutes, until browned and cooked through.
  3. While the meatballs cook, prepare the green sauce by blending spinach, cilantro, parsley, garlic, and lime juice until smooth.
  4. Cook the rice in chicken broth until fully cooked.
  5. Fluff the cooked rice with a fork and stir in the spinach herb mixture until evenly combined.
  6. Serve the green rice topped with the cooked chicken meatballs.
