Creamy Chicken and Orzo 'Risotto'

Ingredients

  • 1/2 chicken breast
  • 1 cup (240ml) chicken broth
  • 1 tbsp chopped shallot
  • 1/2 cup (80g) orzo pasta
  • 1/3 cup (50g) peas
  • 1 tbsp Parmesan cheese
  • Zest of 1 lemon
  • 1 tbsp crème fraîche
  • 1/2 tsp smoked paprika
  • Olive oil, salt, pepper

Instructions

  1. Heat olive oil in a frying pan. Season the chicken breast with salt, pepper, and smoked paprika. Cook the chicken until golden and cooked through (165°F / 75°C). Remove from pan, cut into strips, and set aside.
  2. In the same pan, sauté the shallot until soft. Add the orzo pasta and toast for one minute.
  3. Pour in the chicken broth, bring to a simmer, and stir. Cook for about 10 minutes, or until the orzo is tender and has absorbed most of the liquid.
  4. Stir in the crème fraîche, cooked peas, lemon zest, and Parmesan cheese. Season with pepper.
  5. Add the chicken strips back to the pan and stir to combine. Serve immediately.
