Creamy Chicken and Orzo 'Risotto'
Enjoy the creamy texture of risotto without the constant stirring. This clever dish uses orzo pasta to create a rich and satisfying meal with chicken, peas, and Parmesan.
Ingredients
- 1/2 chicken breast
- 1 cup (240ml) chicken broth
- 1 tbsp chopped shallot
- 1/2 cup (80g) orzo pasta
- 1/3 cup (50g) peas
- 1 tbsp Parmesan cheese
- Zest of 1 lemon
- 1 tbsp crème fraîche
- 1/2 tsp smoked paprika
- Olive oil, salt, pepper
Instructions
- Heat olive oil in a frying pan. Season the chicken breast with salt, pepper, and smoked paprika. Cook the chicken until golden and cooked through (165°F / 75°C). Remove from pan, cut into strips, and set aside.
- In the same pan, sauté the shallot until soft. Add the orzo pasta and toast for one minute.
- Pour in the chicken broth, bring to a simmer, and stir. Cook for about 10 minutes, or until the orzo is tender and has absorbed most of the liquid.
- Stir in the crème fraîche, cooked peas, lemon zest, and Parmesan cheese. Season with pepper.
- Add the chicken strips back to the pan and stir to combine. Serve immediately.
