A deconstructed burrito in a bowl, this healthy and customizable meal features a base of brown rice topped with shredded chicken, fresh pico de gallo, and creamy avocado.

Ingredients

  • 3/4 cup (140g) cooked brown rice
  • 1/2 cup (70g) shredded cooked chicken
  • 1/4 avocado, sliced
  • 1/4 cup (40g) cherry tomatoes, chopped
  • 1/8 red onion, chopped
  • 1 tbsp chopped cilantro
  • Juice of 1/2 lime
  • Pinch of salt

Instructions

  1. In a small bowl, make a quick pico de gallo by combining the chopped tomatoes, red onion, cilantro, lime juice, and salt.
  2. Assemble your bowl. Start with a base of cooked brown rice.
  3. Top the rice with the shredded chicken, sliced avocado, and the fresh pico de gallo.
  4. Garnish with extra cilantro if desired and serve.
