Healthy Chicken Burrito Bowl
A deconstructed burrito in a bowl, this healthy and customizable meal features a base of brown rice topped with shredded chicken, fresh pico de gallo, and creamy avocado.
Ingredients
- 3/4 cup (140g) cooked brown rice
- 1/2 cup (70g) shredded cooked chicken
- 1/4 avocado, sliced
- 1/4 cup (40g) cherry tomatoes, chopped
- 1/8 red onion, chopped
- 1 tbsp chopped cilantro
- Juice of 1/2 lime
- Pinch of salt
Instructions
- In a small bowl, make a quick pico de gallo by combining the chopped tomatoes, red onion, cilantro, lime juice, and salt.
- Assemble your bowl. Start with a base of cooked brown rice.
- Top the rice with the shredded chicken, sliced avocado, and the fresh pico de gallo.
- Garnish with extra cilantro if desired and serve.
