Zesty Chickpea and Black Bean Salad
A refreshing, protein-packed salad that's perfect for potlucks or a healthy lunch, combining chickpeas, black beans, tomatoes, and fresh herbs in a zesty lemon dressing.
Ingredients
For the Dressing:
- 1 clove garlic, minced
- 1/4 cup (60ml) fresh lemon juice
- 3 tbsp olive oil
- 1 tsp sugar or maple syrup
- Salt and pepper to taste
For the Salad:
- 1 can (15 oz / 425g) chickpeas, rinsed and drained
- 1 can (15 oz / 425g) black beans, rinsed and drained
- 1/2 cup (80g) diced red onion
- 1 pint (about 2 cups / 300g) grape tomatoes, halved
- 1/4 cup (10g) chopped basil
- 1/4 cup (10g) chopped parsley
- Optional: sliced avocado for topping
Instructions
- In a small bowl, whisk together the dressing ingredients: minced garlic, lemon juice, olive oil, sugar, salt, and pepper.
- In a large separate bowl, combine the salad ingredients: chickpeas, black beans, diced red onion, halved tomatoes, basil, and parsley.
- Pour the dressing over the salad and toss gently to combine.
- For best flavor, let the salad chill for at least 30 minutes in the refrigerator to allow the flavors to meld.
- Top with sliced avocado before serving, if desired.
