Zesty Chickpea and Black Bean Salad

A refreshing, protein-packed salad that's perfect for potlucks or a healthy lunch, combining chickpeas, black beans, tomatoes, and fresh herbs in a zesty lemon dressing.

Ingredients

For the Dressing:

  • 1 clove garlic, minced
  • 1/4 cup (60ml) fresh lemon juice
  • 3 tbsp olive oil
  • 1 tsp sugar or maple syrup
  • Salt and pepper to taste

For the Salad:

  • 1 can (15 oz / 425g) chickpeas, rinsed and drained
  • 1 can (15 oz / 425g) black beans, rinsed and drained
  • 1/2 cup (80g) diced red onion
  • 1 pint (about 2 cups / 300g) grape tomatoes, halved
  • 1/4 cup (10g) chopped basil
  • 1/4 cup (10g) chopped parsley
  • Optional: sliced avocado for topping

Instructions

  1. In a small bowl, whisk together the dressing ingredients: minced garlic, lemon juice, olive oil, sugar, salt, and pepper.
  2. In a large separate bowl, combine the salad ingredients: chickpeas, black beans, diced red onion, halved tomatoes, basil, and parsley.
  3. Pour the dressing over the salad and toss gently to combine.
  4. For best flavor, let the salad chill for at least 30 minutes in the refrigerator to allow the flavors to meld.
  5. Top with sliced avocado before serving, if desired.
