Gourmet Summer Burrata Salad

An exquisite summer salad that's a true feast for the eyes and palate. It features creamy burrata cheese, ripe peaches, assorted berries, and a sweet rosemary balsamic glaze.

Ingredients

For the Rosemary Balsamic Glaze:

  • 1/4 cup (60ml) white vinegar
  • 2 tbsp honey (or agave)
  • 1 sprig of fresh rosemary

For the Salad:

  • 2 rounds of creamy burrata cheese
  • 1 heirloom tomato, thinly sliced
  • 1/4 cup (40g) halved cherry tomatoes
  • 1 ripe peach, sliced
  • 1/4 cup (40g) blackberries
  • 1/4 cup (40g) raspberries
  • 1/2 cup (75g) black grapes, halved
  • A handful of fresh basil leaves
  • 2 tbsp extra virgin olive oil

Instructions

  1. Make the glaze: In a small saucepan, combine the white vinegar, honey, and rosemary sprig. Simmer over medium heat for a few minutes until it reduces slightly. Remove the rosemary.
  2. On a platter, arrange the burrata rounds as a base.
  3. Artfully arrange the sliced heirloom tomato, cherry tomatoes, and peach slices around the burrata.
  4. Scatter the blackberries, raspberries, and grapes over the salad. Garnish with fresh basil leaves.
  5. Drizzle with olive oil and the prepared glaze. Finish with a pinch of flaky salt.
