Gourmet Summer Burrata Salad
An exquisite summer salad that's a true feast for the eyes and palate. It features creamy burrata cheese, ripe peaches, assorted berries, and a sweet rosemary balsamic glaze.
Ingredients
For the Rosemary Balsamic Glaze:
- 1/4 cup (60ml) white vinegar
- 2 tbsp honey (or agave)
- 1 sprig of fresh rosemary
For the Salad:
- 2 rounds of creamy burrata cheese
- 1 heirloom tomato, thinly sliced
- 1/4 cup (40g) halved cherry tomatoes
- 1 ripe peach, sliced
- 1/4 cup (40g) blackberries
- 1/4 cup (40g) raspberries
- 1/2 cup (75g) black grapes, halved
- A handful of fresh basil leaves
- 2 tbsp extra virgin olive oil
Instructions
- Make the glaze: In a small saucepan, combine the white vinegar, honey, and rosemary sprig. Simmer over medium heat for a few minutes until it reduces slightly. Remove the rosemary.
- On a platter, arrange the burrata rounds as a base.
- Artfully arrange the sliced heirloom tomato, cherry tomatoes, and peach slices around the burrata.
- Scatter the blackberries, raspberries, and grapes over the salad. Garnish with fresh basil leaves.
- Drizzle with olive oil and the prepared glaze. Finish with a pinch of flaky salt.
