Hearty Taco Salad Lunch Bowl
Perfect for meal prep, this taco salad bowl layers crisp romaine lettuce with seasoned ground beef, beans, corn, and all your favorite taco toppings for a satisfying lunch.
Ingredients
- 1/2 lb (225g) lean ground beef or turkey
- 1 tbsp taco seasoning
- 1/2 cup (120ml) water
- 3 cups (90g) chopped romaine lettuce
- 1/2 can (7 oz / 200g) black beans, rinsed
- 1/2 can (7 oz / 200g) corn, drained
- 1/2 cup (75g) cherry tomatoes, halved
- 1/2 cup (55g) grated cheddar cheese
- 1/2 cup (120ml) salsa
Instructions
- Heat a skillet over medium heat. Add the ground meat and cook, breaking it up, until browned. Drain fat.
- Add the taco seasoning and water to the skillet. Reduce heat and simmer until most of the liquid has evaporated, about 5 minutes. Let it cool.
- Assemble the salads by dividing the chopped romaine lettuce into two containers.
- Top with layers of black beans, corn, cooled taco meat, cherry tomatoes, and grated cheese.
- Finish by adding salsa on top. Store in the fridge for a great meal prep lunch.
