Hearty Taco Salad Lunch Bowl

Perfect for meal prep, this taco salad bowl layers crisp romaine lettuce with seasoned ground beef, beans, corn, and all your favorite taco toppings for a satisfying lunch.

Ingredients

  • 1/2 lb (225g) lean ground beef or turkey
  • 1 tbsp taco seasoning
  • 1/2 cup (120ml) water
  • 3 cups (90g) chopped romaine lettuce
  • 1/2 can (7 oz / 200g) black beans, rinsed
  • 1/2 can (7 oz / 200g) corn, drained
  • 1/2 cup (75g) cherry tomatoes, halved
  • 1/2 cup (55g) grated cheddar cheese
  • 1/2 cup (120ml) salsa

Instructions

  1. Heat a skillet over medium heat. Add the ground meat and cook, breaking it up, until browned. Drain fat.
  2. Add the taco seasoning and water to the skillet. Reduce heat and simmer until most of the liquid has evaporated, about 5 minutes. Let it cool.
  3. Assemble the salads by dividing the chopped romaine lettuce into two containers.
  4. Top with layers of black beans, corn, cooled taco meat, cherry tomatoes, and grated cheese.
  5. Finish by adding salsa on top. Store in the fridge for a great meal prep lunch.
