Creamy Chickpea 'Tuna' Pasta Salad

A brilliant vegetarian take on a classic tuna salad, this recipe uses mashed chickpeas to create a creamy, savory, and satisfying pasta salad.

Ingredients

For the Chickpea Mayo:

  • 1 can (15 oz / 425g) chickpeas, rinsed & drained
  • 1/3 small red onion, finely chopped
  • 1/3 celery stalk, finely chopped
  • 1 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp dill, chopped
  • 1 tsp soy sauce
  • 1/2 tsp dijon mustard
  • Salt & Pepper to taste

For the Salad:

  • 1/2 cup (60g) dried penne pasta
  • Handful of shredded lettuce
  • 4 cherry tomatoes, sliced

Instructions

  1. In a bowl, mash the chickpeas with a fork until they have a flaky texture.
  2. Add the remaining chickpea mayo ingredients (onion, celery, mayo, lemon juice, dill, soy, mustard, salt, pepper) and mix until well combined.
  3. Cook the pasta according to package instructions. Drain, rinse, and set aside.
  4. In a larger bowl, combine the cooked pasta, chickpea mayo mixture, shredded lettuce, and sliced cherry tomatoes. Mix well and serve.
