Creamy Chickpea 'Tuna' Pasta Salad
A brilliant vegetarian take on a classic tuna salad, this recipe uses mashed chickpeas to create a creamy, savory, and satisfying pasta salad.
Ingredients
For the Chickpea Mayo:
- 1 can (15 oz / 425g) chickpeas, rinsed & drained
- 1/3 small red onion, finely chopped
- 1/3 celery stalk, finely chopped
- 1 tbsp mayonnaise
- 1 tbsp lemon juice
- 1 tbsp dill, chopped
- 1 tsp soy sauce
- 1/2 tsp dijon mustard
- Salt & Pepper to taste
For the Salad:
- 1/2 cup (60g) dried penne pasta
- Handful of shredded lettuce
- 4 cherry tomatoes, sliced
Instructions
- In a bowl, mash the chickpeas with a fork until they have a flaky texture.
- Add the remaining chickpea mayo ingredients (onion, celery, mayo, lemon juice, dill, soy, mustard, salt, pepper) and mix until well combined.
- Cook the pasta according to package instructions. Drain, rinse, and set aside.
- In a larger bowl, combine the cooked pasta, chickpea mayo mixture, shredded lettuce, and sliced cherry tomatoes. Mix well and serve.
