Healthy Baked Brown Rice Arancini

A nutritious twist on the classic Italian appetizer, these arancini are made with healthy brown rice and sweet potato, then pan-fried until golden brown instead of deep-fried.

Ingredients

  • 1 cup (185g) cooked brown rice, cooled
  • 1/2 cup (115g) cooked and mashed sweet potato
  • 1/4 cup (25g) grated Parmesan cheese
  • 1/4 cup (30g) whole wheat breadcrumbs
  • 1/4 cup (10g) chopped fresh parsley
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 3 tbsp olive oil

Instructions

  1. In a mixing bowl, combine the cooked rice, mashed sweet potato, Parmesan cheese, breadcrumbs, parsley, oregano, salt, and pepper. Mix well.
  2. Shape the mixture into balls, about the size of a golf ball.
  3. Heat the olive oil in a skillet over medium heat.
  4. Pan-fry the arancini, turning occasionally, until they are golden brown on all sides.
  5. Transfer to a plate lined with paper towels to absorb any excess oil. Serve warm.
