Healthy Baked Brown Rice Arancini
A nutritious twist on the classic Italian appetizer, these arancini are made with healthy brown rice and sweet potato, then pan-fried until golden brown instead of deep-fried.
Ingredients
- 1 cup (185g) cooked brown rice, cooled
- 1/2 cup (115g) cooked and mashed sweet potato
- 1/4 cup (25g) grated Parmesan cheese
- 1/4 cup (30g) whole wheat breadcrumbs
- 1/4 cup (10g) chopped fresh parsley
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 3 tbsp olive oil
Instructions
- In a mixing bowl, combine the cooked rice, mashed sweet potato, Parmesan cheese, breadcrumbs, parsley, oregano, salt, and pepper. Mix well.
- Shape the mixture into balls, about the size of a golf ball.
- Heat the olive oil in a skillet over medium heat.
- Pan-fry the arancini, turning occasionally, until they are golden brown on all sides.
- Transfer to a plate lined with paper towels to absorb any excess oil. Serve warm.
