Creamy Avocado Pasta (Vegetarian)
A healthy, vibrant, and incredibly creamy pasta dish where the sauce is made from blended ripe avocados, garlic, and lemon juice. No cooking required for the sauce!
Ingredients
- 7 oz (200g) pasta
- 2 ripe avocados
- 2 cloves garlic, minced
- 1/4 cup (10g) fresh basil leaves
- 2 tbsp fresh lemon juice
- 1/4 cup (60ml) olive oil
- Salt and pepper to taste
- Optional: 1/4 cup (25g) grated Parmesan cheese
Instructions
- Cook the pasta in a large pot of salted water until al dente. Reserve about 1/2 cup (120ml) of pasta water, then drain.
- While the pasta cooks, make the avocado sauce. In a food processor or blender, combine the avocado flesh, garlic, basil, lemon juice, and olive oil. Blend until smooth and creamy.
- Season the sauce with salt and pepper.
- In a large bowl, combine the cooked pasta and the avocado cream. Toss to coat, adding reserved pasta water a little at a time if the sauce is too thick.
- Serve immediately, topped with Parmesan cheese and cherry tomatoes if desired.
