Easy Vegan Black Bean Tacos

A quick, easy, and satisfying vegan meal. These tacos are filled with a warmly spiced mixture of black beans and corn, ready for all your favorite toppings.

Ingredients

For the Taco Filling:

  • 1 cup (170g) canned black beans, rinsed
  • 1 cup (150g) corn (frozen or canned)
  • 1 medium onion, finely chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste

For Serving:

  • Taco shells or tortillas
  • Diced tomatoes, sliced avocado, chopped cilantro

Instructions

  1. In a skillet over medium heat, sauté the chopped onion in a little oil until softened.
  2. Add the black beans and corn. Stir in the spices: cumin, paprika, chili powder, salt, and pepper.
  3. Cook for 5-7 minutes, until heated through.
  4. While the filling cooks, warm the taco shells.
  5. Assemble your tacos by spooning the bean and corn mixture into each shell and adding your favorite toppings.
