Easy Vegan Black Bean Tacos
A quick, easy, and satisfying vegan meal. These tacos are filled with a warmly spiced mixture of black beans and corn, ready for all your favorite toppings.
Ingredients
For the Taco Filling:
- 1 cup (170g) canned black beans, rinsed
- 1 cup (150g) corn (frozen or canned)
- 1 medium onion, finely chopped
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- Salt and pepper to taste
For Serving:
- Taco shells or tortillas
- Diced tomatoes, sliced avocado, chopped cilantro
Instructions
- In a skillet over medium heat, sauté the chopped onion in a little oil until softened.
- Add the black beans and corn. Stir in the spices: cumin, paprika, chili powder, salt, and pepper.
- Cook for 5-7 minutes, until heated through.
- While the filling cooks, warm the taco shells.
- Assemble your tacos by spooning the bean and corn mixture into each shell and adding your favorite toppings.
