Creamy Avocado and Cheese Quesadilla
A quick, creamy, and satisfying snack or light meal. These mini quesadillas are filled with sliced avocado, cream cheese, and shredded cheese, all melted together.
Ingredients
- 2-3 mini tortillas
- 1/2 ripe avocado, sliced
- 1/2 cup (55g) shredded cheese (like cheddar or Monterey Jack)
- 2 tbsp cream cheese
- Salt and pepper to taste
- Cooking spray or butter for the pan
Instructions
- Heat a non-stick skillet over medium heat.
- Spread cream cheese on one half of each mini tortilla. Top with avocado slices and a sprinkle of shredded cheese. Season with salt and pepper.
- Fold the tortilla over the filling to create a half-moon shape.
- Lightly grease the skillet with cooking spray or butter. Cook the quesadillas for 2-3 minutes on each side, until the tortillas are golden brown and the cheese is completely melted.
