Creamy Avocado and Cheese Quesadilla

A quick, creamy, and satisfying snack or light meal. These mini quesadillas are filled with sliced avocado, cream cheese, and shredded cheese, all melted together.

Ingredients

  • 2-3 mini tortillas
  • 1/2 ripe avocado, sliced
  • 1/2 cup (55g) shredded cheese (like cheddar or Monterey Jack)
  • 2 tbsp cream cheese
  • Salt and pepper to taste
  • Cooking spray or butter for the pan

Instructions

  1. Heat a non-stick skillet over medium heat.
  2. Spread cream cheese on one half of each mini tortilla. Top with avocado slices and a sprinkle of shredded cheese. Season with salt and pepper.
  3. Fold the tortilla over the filling to create a half-moon shape.
  4. Lightly grease the skillet with cooking spray or butter. Cook the quesadillas for 2-3 minutes on each side, until the tortillas are golden brown and the cheese is completely melted.
