Grilled Chicken and Avocado Salad
A healthy and satisfying salad perfect for lunch or a light dinner, featuring tender grilled chicken, crispy bacon, creamy avocado, and a simple balsamic vinaigrette.
Ingredients
- 1 boneless, skinless chicken breast
- 1 tbsp olive oil
- Salt and pepper to taste
- 3 cups (90g) mixed salad greens
- 1 cup (150g) cherry tomatoes, diced
- 4 slices of bacon, cooked and crumbled
- 1 avocado, diced
- 1/4 cup (40g) red onion, thinly sliced
- 1 tbsp balsamic vinaigrette
Instructions
- Preheat a grill or grill pan to medium-high heat.
- Season the chicken with salt and pepper, then drizzle with olive oil. Grill for 6-7 minutes per side, or until cooked through (165°F / 75°C). Let it rest, then slice thinly.
- In a large bowl, combine the salad greens, diced tomato, crumbled bacon, diced avocado, and sliced red onion.
- Top the salad with the sliced grilled chicken.
- Drizzle with balsamic vinaigrette just before serving and toss to combine.
