Grilled Chicken and Avocado Salad

A healthy and satisfying salad perfect for lunch or a light dinner, featuring tender grilled chicken, crispy bacon, creamy avocado, and a simple balsamic vinaigrette.

Ingredients

  • 1 boneless, skinless chicken breast
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 3 cups (90g) mixed salad greens
  • 1 cup (150g) cherry tomatoes, diced
  • 4 slices of bacon, cooked and crumbled
  • 1 avocado, diced
  • 1/4 cup (40g) red onion, thinly sliced
  • 1 tbsp balsamic vinaigrette

Instructions

  1. Preheat a grill or grill pan to medium-high heat.
  2. Season the chicken with salt and pepper, then drizzle with olive oil. Grill for 6-7 minutes per side, or until cooked through (165°F / 75°C). Let it rest, then slice thinly.
  3. In a large bowl, combine the salad greens, diced tomato, crumbled bacon, diced avocado, and sliced red onion.
  4. Top the salad with the sliced grilled chicken.
  5. Drizzle with balsamic vinaigrette just before serving and toss to combine.
