Crispy Bacon-Wrapped Chicken with Brown Sugar Glaze

Ingredients

For the Bacon Wrapped Chicken:

  • 2 boneless, skinless chicken breasts
  • 6 slices of bacon
  • 1/8 cup (25g) brown sugar
  • 1 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/8 tsp onion powder
  • 1/4 tsp black pepper
  • 1/4 tsp salt

For the Mashed Potatoes:

  • 4 large potatoes (Russet or Yukon Gold)
  • 4 tbsp unsalted butter
  • 1/2 cup (120ml) milk, or as needed
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). In a small bowl, combine the brown sugar, paprika, garlic powder, onion powder, salt, and pepper.
  2. Season the chicken with half of the spice mixture. Wrap each chicken breast with bacon and place them seam-side down in a baking pan.
  3. Sprinkle the remaining spice mixture over the bacon. Bake for 25-30 minutes, or until the bacon is crisp and the chicken is fully cooked. To confirm doneness, cut into the thickest part to ensure there is no pink, or use a meat thermometer which should read 165°F (75°C).
  4. For the mashed potatoes, boil the peeled potatoes in salted water until tender. Drain and mash them until smooth.
  5. Stir in the butter and gradually add milk until you reach a creamy consistency. Season with salt and pepper to taste.
  6. Serve the bacon-wrapped chicken with the fresh mashed potatoes. Enjoy!
