Crispy Bacon-Wrapped Chicken with Brown Sugar Glaze
A simple yet elegant dish of tender, juicy chicken breasts wrapped in crispy bacon with a sweet and savory brown sugar glaze, baked to perfection in the oven.
Ingredients
For the Bacon Wrapped Chicken:
- 2 boneless, skinless chicken breasts
- 6 slices of bacon
- 1/8 cup (25g) brown sugar
- 1 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/8 tsp onion powder
- 1/4 tsp black pepper
- 1/4 tsp salt
For the Mashed Potatoes:
- 4 large potatoes (Russet or Yukon Gold)
- 4 tbsp unsalted butter
- 1/2 cup (120ml) milk, or as needed
- Salt and black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). In a small bowl, combine the brown sugar, paprika, garlic powder, onion powder, salt, and pepper.
- Season the chicken with half of the spice mixture. Wrap each chicken breast with bacon and place them seam-side down in a baking pan.
- Sprinkle the remaining spice mixture over the bacon. Bake for 25-30 minutes, or until the bacon is crisp and the chicken is fully cooked. To confirm doneness, cut into the thickest part to ensure there is no pink, or use a meat thermometer which should read 165°F (75°C).
- For the mashed potatoes, boil the peeled potatoes in salted water until tender. Drain and mash them until smooth.
- Stir in the butter and gradually add milk until you reach a creamy consistency. Season with salt and pepper to taste.
- Serve the bacon-wrapped chicken with the fresh mashed potatoes. Enjoy!
