Ground Beef and Sweet Potato Skillet

A hearty and healthy one-skillet meal that combines savory ground beef, tender sweet potatoes, and corn in a light, oregano-seasoned tomato sauce. Perfect for a weeknight.

Ingredients

  • 1 tbsp olive oil
  • 1/2 lb (225g) ground beef or turkey
  • 1 red bell pepper, diced
  • 1 medium sweet potato, diced
  • 1 cup (150g) corn (fresh or frozen)
  • 1/2 cup (120ml) beef broth
  • 1 tbsp Dijon mustard
  • 1/2 cup (120ml) tomato sauce
  • 1 tsp oregano
  • Salt and pepper to taste

Instructions

  1. Heat oil in a large skillet over medium-high heat. Add the ground meat and cook, breaking it apart, until browned. Remove the meat from the skillet and set aside.
  2. In the same skillet, add the bell pepper and sweet potato; cook for 5-7 minutes until slightly tender.
  3. Pour in the broth, mustard, and tomato sauce. Cover and simmer for 12-15 minutes until the potato is tender.
  4. Stir in the cooked meat and corn. Add oregano, salt, and pepper to taste.
  5. Cook for 2 more minutes until heated through and the liquid has reduced slightly. Serve with rice or quinoa.
