Ground Beef and Sweet Potato Skillet
A hearty and healthy one-skillet meal that combines savory ground beef, tender sweet potatoes, and corn in a light, oregano-seasoned tomato sauce. Perfect for a weeknight.
Ingredients
- 1 tbsp olive oil
- 1/2 lb (225g) ground beef or turkey
- 1 red bell pepper, diced
- 1 medium sweet potato, diced
- 1 cup (150g) corn (fresh or frozen)
- 1/2 cup (120ml) beef broth
- 1 tbsp Dijon mustard
- 1/2 cup (120ml) tomato sauce
- 1 tsp oregano
- Salt and pepper to taste
Instructions
- Heat oil in a large skillet over medium-high heat. Add the ground meat and cook, breaking it apart, until browned. Remove the meat from the skillet and set aside.
- In the same skillet, add the bell pepper and sweet potato; cook for 5-7 minutes until slightly tender.
- Pour in the broth, mustard, and tomato sauce. Cover and simmer for 12-15 minutes until the potato is tender.
- Stir in the cooked meat and corn. Add oregano, salt, and pepper to taste.
- Cook for 2 more minutes until heated through and the liquid has reduced slightly. Serve with rice or quinoa.
