Simple Garlic Parmesan Pasta

An elegantly simple pasta dish where al dente pasta is tossed in a fragrant garlic-infused olive oil and finished with a generous amount of high-quality Parmigiano-Reggiano cheese.

Ingredients

For the Parmigiano Pasta:

  • 8 oz (225g) of your favorite pasta
  • 1/2 cup (50g) grated Parmigiano-Reggiano cheese
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper to taste

For the Apple-Pecan Salad:

  • 1/2 head of lettuce
  • 1 apple, thinly sliced
  • 1/2 cup (60g) chopped pecans
  • 2 tbsp balsamic vinaigrette dressing

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Reserve 1/2 cup (120ml) of pasta water before draining.
  2. In a pan, heat olive oil over medium heat. Sauté the minced garlic for 1-2 minutes until fragrant but not browned.
  3. Add the drained pasta to the pan and toss to coat with the garlic oil.
  4. Gradually sprinkle in the Parmesan cheese, tossing continuously. Add a splash of reserved pasta water if needed to create a creamy sauce.
  5. Season with salt and pepper. Serve immediately, alongside the Apple-Pecan Salad.
