Simple Garlic Parmesan Pasta
An elegantly simple pasta dish where al dente pasta is tossed in a fragrant garlic-infused olive oil and finished with a generous amount of high-quality Parmigiano-Reggiano cheese.
Ingredients
For the Parmigiano Pasta:
- 8 oz (225g) of your favorite pasta
- 1/2 cup (50g) grated Parmigiano-Reggiano cheese
- 3 tbsp olive oil
- 2 cloves garlic, minced
- Salt and black pepper to taste
For the Apple-Pecan Salad:
- 1/2 head of lettuce
- 1 apple, thinly sliced
- 1/2 cup (60g) chopped pecans
- 2 tbsp balsamic vinaigrette dressing
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente. Reserve 1/2 cup (120ml) of pasta water before draining.
- In a pan, heat olive oil over medium heat. Sauté the minced garlic for 1-2 minutes until fragrant but not browned.
- Add the drained pasta to the pan and toss to coat with the garlic oil.
- Gradually sprinkle in the Parmesan cheese, tossing continuously. Add a splash of reserved pasta water if needed to create a creamy sauce.
- Season with salt and pepper. Serve immediately, alongside the Apple-Pecan Salad.
