Soy-Glazed Caramelized Mushrooms with Spinach
Transform ordinary mushrooms into a deeply savory and delicious side dish. Sliced mushrooms are sautéed until golden and coated in a sweet soy glaze, served over wilted spinach.
Ingredients
- 1/2 lb (250g) mushrooms, sliced
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1 tsp brown sugar
- 4 cups (120g) baby spinach leaves
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes, until they start to brown and caramelize.
- Stir in the soy sauce and brown sugar. Continue cooking for another 2-3 minutes until the mushrooms are well coated. Season with salt and pepper.
- In a separate skillet, wilt the spinach with a splash of olive oil for 2-3 minutes.
- Serve the caramelized mushrooms over the wilted spinach, alongside cooked rice.
