Peanut Butter Tofu with Avocado Rice

A delicious and satisfying vegetarian bowl, featuring crispy fried tofu coated in a savory peanut butter sauce, served over a bed of fluffy rice and topped with fresh avocado.

Ingredients

  • 1 package (12 oz / 350g) tofu, cubed
  • 1 cup (185g) rice
  • 1-2 avocados, sliced
  • 3 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey or agave syrup
  • 1/2 tsp dried ginger
  • 2 tbsp rice vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions.
  2. Meanwhile, fry the tofu cubes in a pan with oil over medium heat until golden brown.
  3. In a small bowl, mix the sauce ingredients: peanut butter, soy sauce, honey/agave, ginger, and rice vinegar. Season with salt and pepper.
  4. Pour the sauce over the fried tofu in the pan. Stir to coat and bring to a simmer, then remove from heat.
  5. Serve the peanut butter tofu over the cooked rice, topped with fresh avocado slices.
