Peanut Butter Tofu with Avocado Rice
A delicious and satisfying vegetarian bowl, featuring crispy fried tofu coated in a savory peanut butter sauce, served over a bed of fluffy rice and topped with fresh avocado.
Ingredients
- 1 package (12 oz / 350g) tofu, cubed
- 1 cup (185g) rice
- 1-2 avocados, sliced
- 3 tbsp peanut butter
- 2 tbsp soy sauce
- 1 tbsp honey or agave syrup
- 1/2 tsp dried ginger
- 2 tbsp rice vinegar
- Salt and pepper to taste
Instructions
- Cook the rice according to package instructions.
- Meanwhile, fry the tofu cubes in a pan with oil over medium heat until golden brown.
- In a small bowl, mix the sauce ingredients: peanut butter, soy sauce, honey/agave, ginger, and rice vinegar. Season with salt and pepper.
- Pour the sauce over the fried tofu in the pan. Stir to coat and bring to a simmer, then remove from heat.
- Serve the peanut butter tofu over the cooked rice, topped with fresh avocado slices.
