Easy Cashew Tofu Stir-Fry

A classic takeout favorite made at home, this stir-fry features golden-brown tofu, crisp vegetables, and crunchy cashews, all tossed in a simple and savory sauce.

Ingredients

For the Sauce:

  • 2 tbsp soy sauce
  • 1 tbsp maple syrup or honey
  • 1 tbsp cornstarch

For the Stir-Fry:

  • 1 block firm tofu, pressed and cubed
  • 2 tbsp oil, divided
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 1/2 cup (70g) unsalted cashews

Instructions

  1. Press the tofu to remove excess water, then cut it into cubes.
  2. In a small bowl, whisk together sauce ingredients: soy sauce, maple syrup, and cornstarch.
  3. Heat 1 tbsp of oil in a large skillet over medium-high heat. Add tofu cubes and cook until all sides are golden brown. Remove tofu and set aside.
  4. In the same skillet, add another tbsp of oil. Stir-fry the bell pepper and carrot until tender-crisp.
  5. Return the tofu to the skillet. Pour the sauce over the tofu and vegetables and stir well to coat.
  6. Toss in the cashews and cook for another 1-2 minutes until warmed through. Serve with rice or noodles.
