Thai Peanut Turkey Lettuce Wraps
A light, healthy, and incredibly flavorful meal. These lettuce wraps are filled with seasoned ground turkey and carrots, all coated in a delicious homemade Thai peanut sauce.
Ingredients
For the Peanut Sauce:
- 2 tbsp all-natural peanut butter
- 1.5 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp water
- 1/2 tsp sesame oil
- 1 tsp lime juice
For the Filling:
- 1/2 tbsp olive oil
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 lb (225g) lean ground turkey
- 1/2 cup (55g) shredded carrots
- 1 tsp curry powder
- Romaine lettuce leaves, for serving
Instructions
- In a small jar, shake together all peanut sauce ingredients until smooth.
- Heat olive oil in a large pan over medium heat. Sauté the onion, garlic, and curry powder for 2-3 minutes.
- Add the ground turkey and cook for 5-7 minutes, breaking it up, until no longer pink.
- Stir in the shredded carrots. Pour the peanut sauce over the turkey mixture and stir well to coat everything evenly.
- To serve, spoon the Thai turkey filling into individual romaine lettuce leaves. Garnish with green onions and peanuts.
