Thai Peanut Turkey Lettuce Wraps

A light, healthy, and incredibly flavorful meal. These lettuce wraps are filled with seasoned ground turkey and carrots, all coated in a delicious homemade Thai peanut sauce.

Ingredients

For the Peanut Sauce:

  • 2 tbsp all-natural peanut butter
  • 1.5 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp water
  • 1/2 tsp sesame oil
  • 1 tsp lime juice

For the Filling:

  • 1/2 tbsp olive oil
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 lb (225g) lean ground turkey
  • 1/2 cup (55g) shredded carrots
  • 1 tsp curry powder
  • Romaine lettuce leaves, for serving

Instructions

  1. In a small jar, shake together all peanut sauce ingredients until smooth.
  2. Heat olive oil in a large pan over medium heat. Sauté the onion, garlic, and curry powder for 2-3 minutes.
  3. Add the ground turkey and cook for 5-7 minutes, breaking it up, until no longer pink.
  4. Stir in the shredded carrots. Pour the peanut sauce over the turkey mixture and stir well to coat everything evenly.
  5. To serve, spoon the Thai turkey filling into individual romaine lettuce leaves. Garnish with green onions and peanuts.
